In my hometown Kagoshima, Torisashi (鶏刺し) is popular, off course ordinal raw chicken is dangerous, so we burn the surface of slices at a little, called as Tataki, next we use safe local material chicken Satsumadori, then there are severe regulations for serving Torisashi in Kagoshima pref. The chef have to use special knife and cooking table and exchange every time. So we can eat Torisashi safely like Fugu in Kagoshima.
